Carrot, Sweet Potato and Coriander Soup
Ingredients
1 tablespoon of olive oil
1 medium onion chopped
4 large carrots chopped
I large sweet potato chopped
1 1/2 litres of vegetable stock
2 tbs of fresh coriander chopped
splash of fresh orange juice
Pepper to taste
Method
Heat the oil in a large saucepan and add the onion and cook on a low heat until the onion starts to soften.
Add the carrot, sweet potato and cover with the stock. Simmer on a low heat until the vegetables become soft.
When slighty cooled transfer to food processor and blend until smooth.
Return to the saucepan and heat up adding in a little orange juice and fresh coriander.
Serve with warm crusty bread
Filling and warming for this time of year!
This is one of my favourite soups, though I must admit Ihave never made it with sweet potatoes, I will have to try it next year.
